What is whey

Whey protein is a mixture of proteins isolated from whey, which was considered to be an unprofitable by-product of cheese, quark, casein, and semi-hard cheese production. Nowadays, thanks to the huge improvement in dairy processing methods such as - baromembrane technologies, crystallizing, drying and especially electrodialysis, it is valued as an important source of protein, lactose, and vitamins. No wonder, it has many uses as a nutritional supplement.

There are two basic types of protein in milk:

  • 80% casein protein
  • 20% whey protein

Casein and whey protein differ in digestion times. Casein protein digests slowly and provides a steady stream of amino acids which prevent tissue breakdown. Whey protein digests fast and more easily (it takes only about 20 minutes) which makes it ideal for muscle growth. Both proteins play an important role in our bodies and provide numerous health benefits.

Whey protein concentrate vs whey protein isolate

Both whey protein concentrate (WPC) and whey protein isolate (WPI) are rich in protein content.

The main difference is that whey protein isolate has a higher protein content with lower levels of lactose and fat. This is caused by its longer manufacturing process. More demanding processing and also the higher protein content are reflected in its higher price.

Demineralized whey powder

Demineralized whey powder

Demineralized whey powder is a new source of profit and supplementary nutrition. It is a very beneficial ingredient used in many food and dairy products.

Demineralized whey powder is the final product after the electrodialysis (ED) and spray-drying process. Electrodialysis removes minerals and acids from the liquid whey using the electrically driven process. Then the demineralized liquid whey is concentrated and spray-dried (liquid removal) into demineralized whey powder.

Typical levels of demineralization are 40%, 50%, 70% and 90%.
