The production of wine from fermented grapes is based on centuries-old traditional methods. Wine acidity adjustment is one of the processes that enrich traditional production with modern technologies and practices.

The pH value of wine has a significant impact on its organoleptic properties (freshness, aroma, flavor, etc.). An unstable pH, especially its increasing values in recent years, causes oxidation of wine, and premature aging, i.e., deterioration in wine quality, which can cause a loss of markets for wine producers.

Bipolar electrodialysis (EDBM) is an innovative technology for winemakers to adjust the pH of wine and must naturally and precisely. This electro-membrane technology does not require any additives and is therefore compliant with regulations for fully organic products.

Adjusting the pH value of wine using EDBM involves only changing the concentration of cations or anions and replacing them with H+ or OH-, thus optimizing the natural acidity.

Bipolar electrodialysis is a very efficient technology for wineries with low energy and (cleaning) chemicals consumption.

Wine pH adjustment – how does it work?

The goal of wine pH adjustment is to find a harmonic balance between sweet and acid taste. MEGA electrodialysis with bipolar membrane process (EDBM) is based on the unique properties of the bipolar membrane (BM) in combination with monopolar cation/anion membranes (CM / AM).

EDBM adjusts the pH of the solution without adding any bases or acids. BM effectively splits water (H2O) into H+ and OH under the influence of the applied electric field. CM and AM transfer cations or anions and selectively generate acid and caustic streams. Therefore, acids or basis in wine are replaced with OH or H+, and you can easily set up wine pH both up and down (deacidification/acidification).

Wine acidification
For not enough acidic wines grown mainly in hot areas (south of USA, Australia, South America) we use the BM-CM module, which is designed to acidify the wine.

Wine deacidification
For overly acidic wines grown mainly in cold areas (north of USA, Germany, Alsace, north of Europe) the BM-AM-AM module is designed for deacidification.

The MEGA EDBM technology uses a lower amount of chemicals for the process (without regeneration of ion exchange columns) and CIP. At the same time, it also shows a significant reduction of wastewater from production.

This dramatically reduces the footprint of wine production. In general, bipolar electrodialysis is an automatic system that is easy to operate and maintain and significantly reduces the environmental impact.

Compared to other technologies EDBM doesn’t touch the basic structure of material but removes dissolved solids by the natural attraction of charged ionized particles towards the electrodes. There is no need for additives.
